Easy as Cake

I like to make cakes from scratch, but I must admit that with a little doctoring up, a Duncan Hines cake mix tastes almost as good as home made. I always use vodka/orange juice mixture instead of water. This keeps the cake moist and fresh for days, especially if you keep it in the refrigerator.

I started doing this with lemon, but now I add this same mixture to any flavor mix. You don’t actually taste the orange, but if you want to taste it more, add some orange zest (or lemon zest), if it is a lemon cake. Simple and so good.

It seems we are always short on time. So today when I read about a real time saver when you are making a cake from a mix, I just had to share it with my readers.

After you have dumped out the mix into a bowl, don’t reach for the wax paper roll to grease the pan. Simply slip your hand into the empty bag, dip into shortening and Voila. If I am making a chocolate bundt cake, I dust the pan with cocoa powder after the shortening. No white streaks of flour.

Then turn the bag inside out and you have a perfect place to put those egg shells.
