I know, I know, but this is a great way to get your kids to eat their veggies. I haven’t actually made these yet, but they are on my list.

Spinach Brownies

1/2 cup oil

2 eggs

One 10 ounce package frozen spinach, thawed and squeezed dry

1/4 cup plus three tablespoons of water

One 20 oz package of Duncan Hines chewy fudge brownie mix.

Heat oven to 350

grease bottom of 9 x 9 inch pan

In bowl of food processor process oil, eggs, spinach and water until smooth

Transfer mixture to bowl, add brownie mix and stir till well combined.

Spread batter in pan, bake 34-37 minutes. Brownies are done when a toothpick inserted one inch from the edge of the pan, comes out clean. Do not overbake.

Each brownie has 170 calories, 16 grams sugar and 8grams fat, so these are not exactly diet food.
